Pineapple with vegetables
/Here is a colourful Mexican-style Ayurvedic recipe for pineapple with vegetables from guest blogger Savitri.
Ingredients
2 Chopped zucchini
2Chopped yellow squash
2 Chopped red bell peppers
3 Chopped large carrots
1/2 Chopped onion
2 cups broccoli
2 cups cauliflower
1 cup pineapple
1 tsp. oregano
1 tsp. fennel seeds
1 tsp.cumin
1 Tbsp. of ghee
A handful of fresh basil
Salt and pepper to taste
Preparation
In a pan, stir-fry the vegetables in the order that appear in the ingredient list, waiting a couple minutes between each vegetable.
In a different pan roast the cumin, fennel seeds and oregano.
When the vegetables are soft, add the spices and the fresh basil to the vegetables, let it cook for 3 minutes more.
Add the salt and pepper.
